Abstract:
Provided are a method for producing ergothioneine in high yield at low cost and a bacterium for use in the method. This method is designed to produce ergothioneine, a related substance thereof, or a mixture of these, and is characterized by comprising culturing, in a medium, an Enterobacteriaceae bacterium capable of producing ergothioneine, and collecting ergothioneine, a related substance thereof, or a mixture of these from the medium or cultured cells, and in that the bacterium is a strain that is modified such that the activity of a protein containing a core sequence region having 5 amino acids Ser-Arg-Gly-Arg-Thr (SEQ ID NO: 7) is reduced. This bacterium is an Enterobacteriaceae bacterium that is capable of producing ergothioneine, and is modified such that the activity of a protein containing a core sequence region having 5 amino acids Ser-Arg-Gly-Arg-Thr (SEQ ID NO: 7) is reduced.
