Abstract:
Provided is exo-β-1,2-glucanase which is one member selected from among: exo-β-1,2-glucanase acting on linear β-1,2-glucan to form sophorose; (a) a protein comprising the amino acid sequence of SEQ ID NO: 1; (b) a protein comprising an amino acid sequence derived from the amino acid sequence of SEQ ID NO: 1 by deletion of the amino acid residues at the 1-18 positions; (c) a protein comprising an amino acid sequence derived from the amino acid sequence of (a) or (b) by substitution, deletion or addition of one to several amino acid residues and having exo-β-1,2-glucanase activity; and (d) a protein showing a 90% or more sequence identity to the amino acid sequence of (a) or (b) and having exo-β-1,2-glucanase activity. Also provided is a method for producing sophorose with the use of exo-β-1,2-glucanase.
