Abstract:
An extraction method of tea water with pressurized water vapor is disclosed, which comprises baking tea leaves and extracting tea water with pressurized water vapor. The tea water is obtained by increasing pressure to adjust the temperature of water vapor and letting the water vapor pass through temperature-adjusted tea leaves. The method maintains the temperature characteristics of the tea and improves dissolving out of trace elements from tea leaves. The tea water obtained has appearance of pure color and tea infusion is translucent. The method improves color stability and cold solubility of the tea infusion, improves color of the instant tea products, and can be widely used in all kinds of tea beverage and on-site tea rooms. The method can increase parameter consistency of the produced tea infusion caused by heat, overcome the shortcomings of lack of taste by long time steeping of the tea and of drinking excessive water when people change the tea species, and reform the preparation method of tea beverage and the method of tasting tea. The raw materials of making tea beverage in the present invention can be old tea leaves and tea dust. Hence, it can improve the production efficiency of tea farmers indirectly and improve the quality and grade of the tea leaves. The present invention belongs to the field of the tea leaves processing and tea beverage.

1. 增压水蒸气萃取茶水的方法, 其特征是: 采用增压的水蒸气萃取茶汤, 调整 压力和温度适应不同品种茶叶。

2.根据权利要求 1所述增压水蒸气萃取茶水的方法, 其特征是: 调整压力和温度 的过程分为设定茶叶温度, 调整水蒸气温度、 压力和设定水蒸气温度、 压力, 调 整茶叶温度两种萃取工艺。

技术领域

本发明公开了一种增压水蒸气萃取茶水的方 法,利用增压调温萃取, 采用调温调 压蒸汽, 增压萃取不同茶叶品种的茶水, 属于茶叶和饮料领域。

背景技术

传统茶叶品茗都是浸泡方法, 调整浸泡时间和浸泡温度,浸泡时间和温度两 个指 标难以控制, 茶水色泽和口感一致性不能保证, 茶叶中多种微量元素, 不能萃取 出来, 发挥作用, 未见采用增压水蒸气萃取茶水的信息报道和研 究。

发明内容

本发明公开了一种增压水蒸气萃取茶水的方 法,利用增压调温水蒸气, 流经调温 茶叶制取茶水。保持了茶叶的温度特性, 提高了茶叶微量元素的析出, 析出的茶 水外观色泽纯正,茶汤透亮, 提高了茶汤色稳定和冷溶性, 改进速溶茶产品的色 泽; 广泛适用于各种茶饮料和茶现场品茗,加工的 茶汤受热变化的参数一致性提 高, 克服了过时浸泡降低茶水口感和改变品茗过量 饮水的不足。

本发明具有以下特征:

1.采用增压的水蒸气萃取茶汤, 调整压力和温度适应不同品种茶叶。

2.分为设定茶叶温度, 调整水蒸气温度、 压力和设定水蒸气温度、 压力, 调整茶 叶温度两种萃取工艺。

具体实施方式

茶树的选择

各种茶树均可, 品茗开始将茶叶放在通用的食品烤箱烘烤, 设定温度为 60°C -100°C范围, 2min。

设备的选择

1. 流行的压力式咖啡机, 应用工艺为设定茶叶温度, 调整水蒸气温度、 压力。

2. 采用压力式咖啡机的咖啡室, 将茶叶装满铺平, 送入通用的食品烘烤箱, 设定温度 80°C-120°C烘烤 3min, 可以应用设定水蒸气温度、 压力, 调整茶叶温 度的萃取工艺。

3. 制造新的增压水蒸气萃取茶水的设备, 按照本发明的两种工艺, 参照压力 式咖啡机增压、 调压、增温的设计, 增加原来咖啡机的咖啡室调整温度的电加热 装置, 可以实现本发明的两种工艺, 在一台设备上实现操作。

本发明的方法实现的设备, 能够水蒸气调整压力和温度, 是开水器或压力式咖啡 机的成熟技术, 调整茶叶室的温度, 可以通过金属容器装入茶叶, 送入烤箱加热 的方式来实现,在设计新型的增压水蒸气萃取 茶水的设备,采用预先加热方式或 在将茶叶室设计为通电加热的装置均可。

本发明按照品茗习惯, 压力设定为 0.5Mpa ; 萃取温度在 80°C-90°C则绿茶茶汤色 泽和口感显著提高; 压力设定为 0.5Mpa, 萃取温度在 90°C-98°C则绿红茶汤色泽 和口感显著提高。

在选择压力式咖啡机操作时,采用将茶室送 入烤箱提高茶叶温度,采用凉白开进 行操作, 可选择水温在 70°C-80°C进行品茗。

制造成专用设备, 压力在 0.2-0.8范围, 控温温度在 60°C-100°C范围内可以调整。 实施本发明的显著效果:

1. 本发明制造茶饮品的原料可采用老茶叶、 茶叶碎末。

2. 间接提高了茶农的生产效率。

3. 提高了茶叶的饮用质量质量和档次。

4. 增大提取茶多酚含量, 增加饮茶的有益成分。
