Abstract:
Polypeptides of the glycoside hydrolase family 61 (GH-61) having an anti-staling effect . Compositions comprising an anti-staling GH-61 polypeptide and use of said polypeptide for preparing a product by heating dough. The glycosidase should have activity against susbstrates selected from oat xylan, Birchwood xylan and wheat arabinoxylan. The GH-61 polypeptides have been isolated from Thelavia terrestris, Coprinus cinereus and Humicola insolens.
