Abstract:
[Problem] The purpose of the present invention is to obtain: a soy protein material that possesses both high solubility and high emulsifiability with low viscosity; and an oil-in-water emulsion using same. [Solution] According to the present invention, it has been discovered that: a fat-containing soy protein material which is obtained by performing appropriate protein enzymatic degradation and mixing a specific fat exhibits such properties as having a specific TCA degradation rate, a solution viscosity of not higher than a certain value, and a zeta potential not higher than a certain value; said properties can be effectively imparted by applying a heat treatment prior to the protein enzymatic degradation; and further, an oil-in-water emulsion using said fat-containing soy protein material having such properties improves stability, in the sense that separation is inhibited when used as a whitener, for example, and exhibits no oiling-off or feathering when added to coffee.
