Abstract:
A fatty oil composition exhibiting fluidity even at temperatures of as low as 5&ring C or below in spite of its being produced by using palm olein as a raw material; and a process for the production of the composition which attains a reduction in the manufacturing cost and effective use of inexpensive palm-related oil. The process is characterized by comprising the step of mixing palm olein with a fatty oil having a linoleic acid content of 40 % by mass or above based on the total constituent fatty acids at a mass ratio of 70:30 to 30:70 to prepare a mixed oil of both, the step of subjecting the mixed oil to transesterification with a 1,3-specific lipase, and the step of mixing the resulting mixed oil with a fatty oil having a linoleic acid content of 40 % by mass or above based on the total constituent fatty acids in such a way that the reduced content of palm olein used as a raw material falls within the range of 15 to 30 % by mass. The fatty oil composition produced by the process exhibits excellent cold resistance.
