Abstract:
The invention relates to a ferment activator which is based on lactic acid bacteria. The invention is characterised in that it comprises at least: a reducing disaccharide, a non-reducing disaccharide, an alkaline metal salt and/or an alkaline-earth metal salt. The invention also relates to the ferment activated by the activator. The invention further relates to the method of preparing an industrial or food product, which is characterised in that it makes use of said activator.
