Abstract:
Disclosed is a fermentation method for producing high quality fermentation products by performing facultative anaerobic fermentation processing and thereby facilitating the fermentation processing. Specifically disclosed is a fermentation method using a fermentation processing unit (100) comprising at least one enclosed or semi-enclosed fermenters (105-107), and a suction unit (108) which sucks the gas in the fermenters (105-107) and supplies gas into the fermenters (105-107), wherein fermentation processing is carried out in the fermenters (105-107) under facultative anaerobic conditions. In the fermenters (105-107), deposition height of a fermentation material stacked therein is two thirds or more of the installation height (L1) of a suction hole.
