Abstract:
The present invention addresses the problem of providing, inter alia: a fermented composition that contains lactic acid bacteria or other live bacteria in at least a fixed concentration (cfu/mL) and has a pH in a neutral region, at least one of "an increase in acid flavor or acid odor," "a reduction in pH," and "a reduction in the live bacteria concentration (cfu/mL) of lactic acid bacteria or the like" during refrigerated storage after production being suppressed; and a method for producing the fermented composition. The present invention relates to, inter alia: a fermented composition containing (a) 1×106 cfu/mL or more of one or more types of live bacteria selected from the group consisting of lactic acid bacteria and bacteria of the genus Bifidobacterium, (b) a raw milk ingredient and/or a fermented article of the raw milk ingredient, and (c) dead bacteria of the genus Lactococcus, the fermented composition having a pH of 6.0-7.4; and a method for producing the fermented composition.
