Abstract:
Provided are: novel fermented milk having both of a dense and smooth viscous property and a rich texture without needing to use a stabilizer or a thickening agent; and a method for producing the fermented milk. The fermented milk according to the present invention contains milk protein in an amount of 5.0% or more, wherein milk whey protein is contained in an amount of 25% or more in the milk protein, the average particle diameter of the fermented milk is 3 to 30 μm inclusive, and the viscosity of the fermented milm is 1000 mPa·s or more. It becomes possible to provide fermented milk having both of a dense and smooth viscous property and a rich texture without needing to use a stabilizer or a thickening agent.
