Abstract:
To provide a filling-wrapped noodle strip food such as gyoza in which the edge parts of noodle strips tend not to harden after being cooked using a microwave oven, etc.; and a method for manufacturing said food. The filling-wrapped noodle strip food is manufactured using noodle strips containing, in relation to the total weight of the noodle strips, preferably 15-65% by weight of a grain flour, preferably 1-48% by weight of acetylated phosphoric acid crosslinked starch, and preferably 1-42% by weight of hydroxypropylated starch, the ratio (based on weight) of grain flour to acetylated phosphate crosslinked starch and hydroxypropylated starch being 90:10 to 20:80.
