Disclosed are fine noble metal particles with a protein adsorbed thereon, which contain fine noble metal particles and a protein that is adsorbed on the surfaces of the fine noble metal particles. The fine noble metal particles are characterized in that the isoelectric point of the protein is within the pH range of 4.0-7.5, and the amount of adsorbed protein is within the range of 3-55.1% by weight relative to the total weight of the fine noble metal particles and the protein. The fine noble metal particles with a protein adsorbed thereon have excellent re-dispersibility. Consequently, even if fine noble metal particles with a protein adsorbed thereon are collected from a fine noble metal particle dispersion by adjusting the pH of the dispersion to the isoelectric point of the protein without adding a degrading enzyme of the protein so that the fine noble metal particles agglomerate, the average particle diameter of the collected fine noble metal particles with a protein adsorbed thereon is not significantly increased when the fine noble metal particles with a protein adsorbed thereon are re-dispersed in another dispersion medium.
