Fish eggs (W) are laid on a carrying tray (6), light is projected from a light projection means (11) upon the fish eggs (W), and an image of a portion, at a minimum, of the fish eggs (W) in the state wherein the light from the light projection means (11) is projected upon the fish eggs (W) is captured with an image capture means (12). The image (Pa) that is captured by the image capture means (12) is processed, the light penetration value of light that penetrates the fish eggs (W) is measured, and the maturity of the fish eggs (W) is assessed on the basis of the measured light penetration value. Thus are a fish egg maturity assessment device and a fish egg maturity assessment method capable of accurately assessing the maturity of fish eggs disclosed.
