Abstract:
The present invention relates to a fish processing method capable of making effective use of fish that had been discarded in the past. The present invention provides a fish processing method characterized in comprising: a salting process for leaving fish scraps that have been covered with salt on a dish; and a mid-air suspending process for suspending and/or placing on a net the fish scraps from the salting process with the salt still clinging thereto so as not to be exposed to direct sunlight and for leaving the fish scraps in such a manner that oil dripping from the fish scraps evaporates directly below the fish scraps and surrounds the fish scraps.
