Abstract:
To obtain a naturally-derived flavor-enhancing agent for improving the flavor of cooked food products (to enhance saltiness and savoriness, in particular). Provided is a flavor-enhancing agent which uses, as an active ingredient, extracts of beans, the raw materials of said beans having been preheated, and the extracts of said beans having a fat content of no more than 15 weight% in terms of solid matter, and a content ratio of proteins to carbohydrates of 1 to 200 weight%.
