Abstract:
A method for improving the quality of flour used in a dough product is developed according to the present invention, the method comprising the steps of grinding cephalaria seeds in a mill; removing the fat of the resulting ground cephalaria to give a cephalaria pulp to a cephalaria pulp; obtaining a first cephalaria extract by applying an extraction process with water to a part of said cephalaria pulp; obtaining a second cephalaria extract by applying an extraction process with ethyl alcohol to another part of said cephalaria pulp; obtaining a pure extract by evaporating water and ethyl alcohol; and adding the first cephalaria extract and the second cephalaria extract to said flour to give flour with improved quality.
