Abstract:
This foamable oil-in-water-type emulsified oil and fat composition contains: 45-70% of water; 25-50% of oil-and-fat, in which 3-50% of laurin-based oil-and-fat and 40-90% of a palm-based oil-and-fat containing 45-70% of S2U are contained in the total oil-and-fat, the ester exchange oil-and-fat content is less than 1%, the trans fatty acid content is less than 1% and the saturated fatty acid content is 47-65% in the total amount of constituent fatty acid of the oil-and-fat, the saturated fatty acid content is 95-100% in the total amount of constituent fatty acid, and 0.1-1% of a polyglycerin fatty acid ester including 6-25% of saturated fatty acids having 16 and 18 carbon atoms and 55-85% of saturated fatty acids having 20 or more carbon atoms is contained in the total amount of the oil phase; and 0.05-0.5% of an emulsifier in which the saturated fatty acid content is 60-100% in the total amount of constituent fatty acid of the emulsifier.
