Abstract:
Provided is an acid foaming oil-in-water type emulsified composition that can suppress a change of physical properties during frozen storage and during thawing. A foaming oil-in-water type emulsified composition according to the present invention contains 30% by weight to 50% by weight of total solid content. The total solid content contains 10% by weight to 25% by weight of an oil and fat content, based on the total amount of the foaming oil-in-water type emulsified composition, and 0.6% by weight to 4% by weight of a protein, based on the total amount of the foaming oil-in-water type emulsified composition. The pH of the foaming oil-in-water type emulsified composition is 3 to 5.
