Abstract:
Disclosed is an additive which can retain the firmness of an ice cream composition for a long period and can improve the texture of an ice cream.
Specifically disclosed is a food additive for an ice cream, which comprises a needle-like or columnar inorganic material, and is characterized in that the average particle diameter (dl) of the particles is 2 to 50 μm as measured in the direction of the longer diameter on a scanning electron microscope and the aspect ratio (dl/ds) of the average particle diameter (dl) of the particles as measured in the direction of the longer diameter on a scanning electron microscope to the average particle diameter (ds) of the particles as measured in the direction of the shorter diameter on a scanning electron microscope is 5 to 100.
