Abstract:
The present invention provides food and beverages which have good flavor as a result of reducing an astringent taste caused by cyclo(aspartyl-glycine) contained therein. According to the present invention, both the cyclo(aspartyl-glycine) content in the food and beverages and the weight ratio (glucose/maltose weight ratio) of the glucose content to the maltose content are adjusted so as to fall within specific ranges.
