Abstract:
This food discoloration inhibitor has an active component comprising a low molecular-weight lignin having a molecular weight peak in the range of molecular weights 4,000-9,500 at a wavelength of 254 nm in GPC spectral analysis using a UV detector, and/or a high molecular-weight lignin having a molecular weight peak in the range of molecular weights 10,000-40,000 at a wavelength of 254 nm.
