Abstract:
Provided are a method and a device for cutting a flat food dough into a long food dough, without imparting stress thereto. This food-dough cutting method for cutting a flat food dough into a long continuous food dough is provided with: a step (a) in which a cutter (7) is relatively moved in a direction from one side edge of a flat food dough (3) to another side edge thereof to cut the food dough (3), the cutter (7) is removed, in an upward direction, from the food dough (3), leaving an uncut portion at a position near to the other side edge, and the cutting operation is stopped; a step (b) in which the cutter (7) is relatively moved with respect to the food dough (3), in a direction orthogonal to the cutting direction, the food dough (3) is subsequently cut in a direction from the other side edge to the one side edge, the cutter (7) is removed in an upward direction, leaving an uncut portion at a position near the one side edge, and the cutting operation is stopped; a step (c) in which the cutter (7) is relatively moved with respect to the food dough (3), in the direction orthogonal to the cutting direction; and a step (d) in which steps (a) to (c) are repeated an appropriate number of times.
