Abstract:
A method of producing a food or a drink containing one or more ingredients extracted from a starting material, which is selected from among a fruit, a vegetable, a bean, a seed, a mushroom, an alga and tea, involving the steps of: freezing the starting material; milling the frozen matter while controlling temperature; and dipping the milled matter in a solvent and thus extracting one or more ingredients of the starting material. In the milling step, it is preferable to control the temperature to a level not exceeding the brittle temperature of an aroma component, a colorant or an essential oil that can be extracted from the starting material. According to this production method, the obtained food or drink can contain a sufficient amount of a desired ingredient originating in the fruit or vegetable.
