Abstract:
[Problem] To provide a food freezing device, whereby, when a food such as a cooked rice food or noodles is quickly frozen, the taste before the quick-freezing can be maintained, a food freezing method and a frozen food. [Solution] The food freezing device 400 according to the present invention comprises: a freezing tank 410 for pooling an ice slurry S while keeping at -10°C or lower; a hanger 431 for retaining a food F to be frozen, said food containing α-starch, within the ice slurry S pooled in the freezing tank 410; an ice slurry-supplying means (420, 450, 456 and 300) for supplying the ice slurry into the freezing tank 410; and a flowing means (130) for flowing the ice slurry in such a manner that the ice slurry S collides at a definite relative speed or higher with the food F to be frozen. The food F to be frozen is a food containing a large amount of α-starch, namely, a cooked rice food such as nigiri-zushi or noodles such as udon.
