Abstract:
The present invention relates to a food with improved flavor, nutrition, and color and a preparation method therefor and, more specifically, to a food which contains a compound selected from the group consisting of hemes, porphyrins, metal porphyrins, and porphyrin derivatives or a microorganism producing the compound and has similar flavors, nutrition, and colors to those of meats, and a preparation method therefor. According to the present invention, hemes and various porphyrins, metal porphyrins, and porphyrin derivatives can be produced at high yield through fermentation of the microorganism variant, and are isolated/purified and added to foods, thereby improving flavors, nutrition, and colors in the foods.
