Abstract:
It is intended to provide a highly functional food material made from beans which contains all bean components released thereinto; a method of producing the food material made from beans whereby the food material made from beans can be conveniently and efficiently obtained directly from beans; and a professed food with the use of the food material made from beans which is satisfactory in taste and texture and has a high nutritional value. Namely, a food material made from beans obtained by disintegrating beans in a state where the moisture content attains 65% by weight or more (preferably from 65 to 95% by weight) based on the total weight of the bean-related components and moisture contained in the beans, which is characterized in that the bean-related components are maintained in a hydrated state therein. A method of producing a food material made from beans characterized by comprising, in producing the food material made from beans, adding water to beans so as to give a moisture content of 65% by weight or more and then disintegrating the beans so that the bean-related components are maintained in a hydrated state therein.
