Abstract:
Disclosed are a food material using rice as a starting material, which is sufficiently available as a substitute from the standpoint of cost at the commercial level, a processed food using the same, and a method for the production thereof. Rice grains are soaked in water to give a liquid with rice grains soaked therein and the rice grains are allowed to absorb water in this state.  The whole liquid with rice grains soaked therein is fed into a mill and milled therein.  Thus, water-absorbed fine rice grains are obtained.  These water-absorbed fine rice grains are characterized by being a rice paste wherein free water occupies the space among the fine rice grains.  Thus, the fine rice grains in the rice paste can be miniaturized.  Owing to the action of the free water in the course of milling, heat denaturation of rice components can be prevented.  The fine rice grains can be maintained in the water-absorbed state, which makes it possible to avoid damage of the fine rice grains (simple starch grains) caused by drying.  Moreover, the free water improves the compatibility of the rice paste with a kneaded matter comprising a cereal flour of a different kind or other materials, which facilitates the mixing of these materials.
