Abstract:
Disclosed is a food packaging sheet which can be used for extract bags for tea and coffee and the like, and which adds new functions such as flavour and health functions to the conventional food packaging function of the food packaging sheet. The disclosed food packaging sheet has a water-soluble or water-dispersible coating film which is formed by depositing an aqueous solution or an aqueous dispersion on a substrate sheet selected from a tissue paper, a non-woven fabric, or a synthetic resin mesh, and heating or drying the coating as a coating film. Said aqueous solution or aqueous dispersion has: a food constituent selected from flavouring agents or functional health foods which does not easily form a film and which has a water activity in the range of 0.60-0.98 at normal temperature when the volatile matter content is 5% by mass; and a specific water-soluble non-polymeric film forming agent which has a water activity in the range of 0.05-0.40 at normal temperature when the volatile matter content is 5% by mass. The specific water-soluble non-polymeric film forming agent is a water-soluble food ingredient selected from a group comprising tea or plant extracts which have water-soluble polyphenol and water-soluble low molecular weight peptides as a main component. The flavouring agent and functional health food are food ingredients which take on viscosity and heterogeneity or powder fall characteristics when used in the coating film.
