Abstract:
Provided is a composition that allows various vegetables, fruits, algae, etc., to exist stably in the composition, and that has various usage characteristics capable of being used in a wide variety of uses. Disclosed is a food-particle-containing oil/fat composition comprising food particles of at least one type of food selected from vegetables, fruits, and algae, and an oil/fat. In the oil/fat composition: (1) the content of the food particles is from 2 mass% to 98 mass%; (2) the percentage of the total content of oil(s)/fat(s) is from 10 mass% to 98 mass%; (3) the mode diameter in a state having undergone an ultrasonic treatment is from 0.3 µm to 200 µm; and (4) the content of water is less than 20 mass%.
