Abstract:
The purpose of the present invention is to provide a frozen fresh yeast formed body: by which the leavening power of fresh yeast is maintained after long-term storage by freezing, even without adding culinary fat or an emulsifier; and in which one piece of the frozen formed body does not strongly adhere to another piece of the frozen formed body, and even if the frozen formed bodies adhere to one another, the frozen formed bodies can easily be separated, making it possible to measure the yeast amount by counting the number of the frozen formed bodies. Provided is a frozen fresh yeast formed body comprising frozen fresh yeast, in which the shape of a piece of the formed body approximates a ball with the maximum width of 2-20 cm. With respect to the total weight of the frozen fresh yeast formed body, the yeast content is 25-40 wt% in terms of dry weight, and the water content is 60-75 wt%. It is preferable that the maximum area of contact between two pieces of the frozen fresh yeast formed body is 20% or less of the total surface area of one piece of the formed body.
