Abstract:
Disclosed are a fruity sparkling coffee and a preparation process therefor. The fruity sparkling coffee comprises the following raw materials in parts by weight: 49.5 parts of Ethiopian coffee beans, 35.7 parts of white granulated sugar, 76.7 parts of fructose syrup, 0.2 part of potassium sorbate, 3.0 parts of lemon juice concentrate, 0.37 part of anhydrous citric acid, 0.3 part of sodium citrate, 9.3 parts of fruity flavor, 2.5 parts of coffee flavor, and 800-1200 parts of RO water. The fruity sparkling coffee is produced by grinding, extraction and other processes. This process is easy to operate, and is suitable for large-scale production, and the prepared fruity sparkling coffee has good mouthfeel.
