Abstract:
The present invention relates to a fryer for preventing rancidity using electromagnetic induction heating, the fryer comprising: an enclosure in which the upper portion thereof is open, legs are formed in the lower portion thereof, and an openable door is installed on one side thereof; a frying container for frying foods with oil; a rancidity prevention part for preventing the oil in the frying container from being mixed with fried food waste; and a controller part having an induction heating member so as to increase the temperature of the oil. The present invention prevents a convection current phenomenon in the oils contained in a rancidity prevention tank and the frying container, thereby preventing the oils from mixing, whereby the fried food waste is prevented from being introduced into the frying container. In addition, the progress of rancidity slows, and thus crispy food texture can be enjoyed without generation of the characteristic smell of old oil when frying foods.
