Abstract:
A method for “improving the taste and functionality of germinated seeds” and, at the same time, “suppressing the proliferation of undesirable microbes during a germination treatment by a safe means” in the preparation of the germinated seeds; a method for preparing germinated seeds having improved germination rate, germination percentage, antibacterial properties, taste components and functional components, which is characterized by carrying out a germination treatment while immersing seeds in a solution containing an onion (particularly a red onion); germinated seeds produced by the preceding method; and a germinated seed-containing food (particularly a rice, bread, noodle, confectionery or liquid food containing germinated brown rice), which contains the germinated seeds.
