Abstract:
Disclosed are a gibberellic acid isocompound and the use thereof, belonging to the field of quality control of beer. High performance liquid chromatography, preparative chromatography, mass spectroscopy and nuclear magnetic resonance spectrum techniques are used simultaneously in the present invention, and therefore, the purpose of separating and identifying the gibberellic acid degradation products in the beer brewing process is achieved. The compound is generated at the beginning of the malting process of beer, and the amount of the compound produced is the highest after the compound is subjected to saccharification and wort boiling. A substance A is slightly soluble in a neutral aqueous solution, easily dissolves in an acid aqueous solution system, and can exist stably after being subjected to a high temperature treatment. The achievement of the present invention provides a new direction for safety assessments of relevant foodstuffs, such as beer, and the usage and the residual amounts of gibberellic acid can be evaluated by detecting the gibberellic acid isocompound A in the beer brewing process.
