Disclosed are a gluten product processing apparatus and a gluten product processing method, the processing apparatus comprising an extruding machine (1). A material discharge end of the extruding machine (1) is provided with a press fitting mold, and the press fitting mold comprises a stationary mold (2) and a movable mold (3); the stationary mold (2) is arranged at a material discharge port of the extruding machine (1), an outer end face of the stationary mold is provided with a hemispherical stationary mold bowl (21), and the interior thereof is provided with a stationary mold material passage channel (22); the movable mold (3) can move in a material extrusion direction of the extruding machine (1), an end face of the movable mold is provided with a hemispherical movable mold bowl (31) at a position corresponding to the stationary mold bowl (21), the interior thereof is provided with a movable mold through hole (32), and a matching and movable material injection pipe (33) is arranged in the movable mold through hole (32); one end of the material injection pipe (33) penetrates into the movable mold bowl (31), the other end thereof communicates with a batching barrel (4) by means of a pipeline, and the communicating pipeline is provided with a metering pump (5); the other end of the movable mold (3) is provided with a mold base (34) on which the material injection pipe (33) is mounted, the mold base (34) can move relative to the movable mold (3), one end of the mold base is provided with a push-pull mechanism (37), and the movable mold (3) is provided with a pressing mechanism maintaining close contact with the mold base (34); and a side face of the movable mold (3) is provided with a limiting block (38). The processing apparatus produces center-injection spherical gluten by rapid press fitting and forming of the movable and stationary molds, filling a gap in the market, and the apparatus operation is simple.
