Abstract:
This invention addresses the problem of providing a high-protein-content granular vegetable-protein material that is softer and easier to eat than existing such materials. It was found that, when manufacturing a granular vegetable-protein material, adding a specific emulsifier to the raw ingredients and using a biaxial extruder or the like to perform extrusion yields a granular vegetable-protein material that, despite having a high protein content, becomes soft and easy to eat upon absorbing water. The abovementioned problem was thereby solved.
