GROUND MEAT PRODUCT

BACKGROUND OF THE INVENTION

1. Field of the Invention The invention relates to ground meat products, and more particularly, to ground meat products that contain hummus and/or tahini. The invention also relates to a method of making a ground meat product containing hummus and/or tahini.

2. Description of Related Art While great numbers of people are reported to be making a conscientious effort to restrict their consumption of fat and cholesterol, meat products remain a principal source of both in many diets.

Palatability and acceptance of conventional ground beef and other ground meat products are closely related to their flavor intensity, tenderness and juiciness.

One attempt in recent years to increase tenderness and juiciness relied on the addition of water to ground meat. Because of loss of water from such a mixture by evaporation, it was noted that it deteriorated quickly after any heating or cooking, by becoming dry and losing flavor. The present invention provides a method for increasing flavor intensity, tenderness and juiciness of a ground meat product by adding hummus or tahini paste to the ground meat.

SUMMARY OF THE INVENTION

In one embodiment, the invention provides a meat mixture of hummus paste and ground meat such as poultry, or, beef, or lamb, or pork, or fish, or seafood, or meat analog, or their mix.

In another embodiment, the invention provides a meat mixture of tahini paste and ground meat such as poultry, or beef, or lamb, or pork, or fish, or seafood, or meat analog, or their mix.

In yet another embodiment, the invention provides a meat mixture of hummus paste, tahini paste and ground meat such as beef, poultry, lamb, pork, fish, seafood, meat analog or their mix.

Other features, advantages and objects of the invention will be apparent from the ensuing particular description.

DETAILED DESCRIPTION

In the following detailed description of the invention, numerous specific details are set forth in order to provide a thorough understanding of the invention. However, it will be obvious to one skilled in the art that the invention may be practiced without these specific details. In other instances, well known methods, procedures, components, and elements have not been described in detail so as not to unnecessarily obscure aspects of the invention.

The present invention centers around the addition of hummus paste and/or tahini paste to different ground meat products. In the first embodiment, hummus spread or paste is added to ground meat to create a hummus containing comminuted meat product. In the second embodiment, tahini paste is added to ground meat to create a tahini containing comminuted meat product. In the third embodiment, hummus paste and tahini paste are added to ground meat to create a hummus and tahini containing comminuted meat product. Said ground meat could be beef, or poultry, or pork, or lamb, or fish, or seafood, or meat analog or their mixture.

In one embodiment of the invention, the following ingredients are included in the mixture (the mixture may contain additional ingredients as well) : 100 parts by weight of hummus paste! about 100 parts or less by weight of ground meat! and small amounts of seasoning and salt. The ground meat so provided is then placed either in a commercial meat mixer or in a mixer bowl, and the hummus paste and other ingredients are added while mixing. The ingredients are blended until they are mixed well, that is, thoroughly blended but not over blended. This mixture is recommended for consumers who prefer a stronger taste of hummus in the final product.

After mixing, the mixture may then be formed into patties or packaged in bulk packs in conventional manner.
