Abstract:
A gummi candy body having a moisture value of 20 wt% or greater, a pH of 4.0 or less, and a moisture activity value of 0.86 or less is covered with and encapsulated in a collagen casing. Thus, it is possible to provide a high-moisture-content gummi candy that has excellent shape retainability, has both fresh flavor and resilient texture, is suitable for distribution at atmospheric temperature and has an unconventional fruit-like confectionary shape, and in which syneresis, surface dissolution, and stickiness are significantly reduced even though the moisture value of the gummi candy body is 20 wt% or greater and the gummi candy body has a high moisture content.
