Abstract:
The problem to be addressed by the present invention is that of providing an oil-in-water emulsion which, despite having a high fat and oil content and high sugar content and having excellent shelf life, dissolves favorably in the mouth, does not taste oily, and has heat-resistant shape retention suitable to heat-cooking such as baking. This oil-in-water emulsion contains 0.3-8 mass% starch, 25-45 mass% sugars, excluding starches, 5-25 mass% water, and 25-55 mass% oils and fats which include medium-chain fatty acid-containing triacylglycerols, wherein the medium-chain fatty acid-containing triacylglycerols make up greater than or equal to 30 mass% of the oils and fats.
