Abstract:
Provided is a high-sugar fluid food that, as a result of including both a sucrose fatty acid ester and a lipophilic emulsifier, has excellent storage stability and has improved stability and effervescence at low pH after being mixed into a beverage. A high-sugar fluid food that includes a sucrose fatty acid ester, a lipophilic emulsifier, sugar, an oily component, and an aqueous component, the sugar content being 30-70 mass% of the total amount of the high-sugar fluid food.
