Abstract:
Dextrin particles usable as a component of thickeners having satisfactory dispersibility in water, etc. are inexpensively provided. The present invention relates to: fibrous dextrin particles; a thickener comprising the fibrous dextrin particles; a food containing the fibrous dextrin particles; and a method for producing the fibrous dextrin particles which comprises spray-drying a dextrin solution having a viscosity of 100 mPa∙s or higher.
