Abstract:
A hydrolysed protein debittering composition and the product, preparation, and application thereof, the composition comprising short chain fatty acids, medium chain fatty acids, and long chain fatty acids; based on the total mass of the short chain fatty acids, medium chain fatty acids, and long chain fatty acids being 100%, the content of the medium chain fatty acids is 0.2-4.7%, the content of the long chain fatty acids is 95.1-99.4%, and the remainder is short chain fatty acids. The present hydrolysed protein debittering composition can be used for preparing infant formula milk powder, milk powder for the elderly, and other infant formula food for special medical uses.
