An image processing method, the method comprising: acquiring the image data of a current object to be detected which has been collected by a first image collection module; in the case where the first image collection module does not emit light and a second image collection module adjacent to the first image collection module emits light, predetermining an interference signal from the second image collection module to an image collected by the first image collection module; and according to the interference signal, removing interference from the data of each pixel point among the acquired image data to generate actual image data. In the case where image collection modules are placed at adjacent positions, the present application eliminates the influence of the light source of one module on the image collection module on the other side, eliminating the mutual interference, such that the acquired image can stably and reliably restore the real image of a bank note, thereby ensuring the ability to identify counterfeit bank notes. In addition, the present invention further provides an image processing device and an image processing system which have the described technical advantages.
