Abstract:
Provided is an improved makgeolli and manufacturing method therefor. Nuruk is processed by the following processes: (1) bring heated water in contact with ripened nuruk; (2) hold for a certain period; and (3) separate the heated water from the nuruk after bringing same into contact. Makgeolli is manufactured using said nuruk. Said makgeolli has a reduced geosmin content and is suited to the preferences of Japanese people.
