Abstract:
The objective of the present invention is to provide soy milk having a good flavor, in which soy odors, grassy odors, bitter flavors, etc., have been suppressed, and to provide a method for producing said soy milk. Specifically, provided are: a soy milk flavor-improving agent in which a triacylglycerol having a C6-12 medium-chain fatty acid as a structural fatty acid is an active ingredient; improved soy milk containing the soy milk flavor-improving agent and soy milk; and a food or drink product including the improved soy milk. Also provided is a method for producing the improved soy milk.
