Claim 1: A product of instant dehydrated meal consisting of

- Rice

- Pasta

- legumes

- Tomato sauce

- Fried crispy onions

Claim 2: A process for producing instant dehydrated meal of, rice, pasta and legumes with dressings as a food product where the process is as follows:

(A) Rice and legumes are washed

(B) legumes, pasta, and rice are all well steam cooked separately.

(C) legumes, pasta and rice are dehydrated separately in a tunnel dryer at temperature of about 60-110 Celsius to the stable shelf life moisture level at room temperature.

(D) Ingredients are cooled down, packed and sealed with the required quantity in portions as desired, for example;

Pasta 40—60% legumes 10-20%

Rice 15-30%

(E) To prepare an instant meal of dehydrated rice and pasta and legumes with dressings , just add boiling water to the ingredients for 5-7 minutes then add the dressings of tomato sauce and fried crispy onions. Claim 3:Accoding to claim 2, Dressings added to the instant dehydrated meal of legumes, rice and pasta:

(a) Tomato sauce

Garlic is peeled and fried in boiling oil to golden color. Mashed fresh tomatoes and/or aseptic tomato paste are added to the garlic to simmer then salt, cumin, vinegar, black pepper are added to the mixture. Ingredients are vacuum packed for a long shelf life at room temperature. The ingredients of the tomato sauce can be powder recipe instead of liquid

(b) fried crispy onions

Onions are peeled and cut into small dices then deep fried in oil till it is very crispy then drained off excess oil, packed and sealed in bags with inert gas for a long shelf life at room temperature.

The novelty of the invention

Production of instant dehydrated meal oflegumes, rice and pasta with dressings. This product is safe, hygienic, healthy, and nutritious with a long shelf life without artificial flavors or colors. It has availability and quality all times with a value for money price. It is prepared by adding boiling water to the dehydrated ingredients for 5-7 minutes to reconstitute the meal then adding the dressings of tomato sauce and crispy fried onions.

Detailed Description

The present invention is aboutthe production of instant dehydrated meal of legumes, rice and pasta with dressings with a long shelf life.

The production process starts by washing rice and legumes ( lentils and/or chickpeas and/or peas and/or beans and/or lupins)and then the rest of the ingredients are processed as followsirice, pasta and legumes are well cooked in steam cooker separately. Ingredients are drained off excess water. All ingredients are dehydrated in tunnel dryer separately at 60-110 Celsius degrees to the moisture level of long shelf life for each item. After being dehydrated, the ingredients are cooled down and packed and sealed in bags with different ratios as desired, for example

Pasta 40—60% legumes 10-20%

Rice 15-30%

DRESSINGS

1- Tomato sauce

It is full of vitamins, minerals, carbohydrates, proteins, antioxidants, free of artificial flavors, colors or preservatives. It is prepared by adding boiling water to the ingredients for 5-7 minutes then adding the dressings of tomato sauce and fried crispy onions.
