Abstract:
A novel nonreducing sugar comprising glucose as a constituent sugar; a novel enzyme capable of expanding the room for choice of nonreducing sugar and forming the nonreducing sugar; a forming method and production process therefor; a DNA coding for the enzyme; a recombinant DNA comprising the same; a relevant transformant; and a composition comprising the nonreducing sugar and use thereof. In particular, there is provided an isocyclomaltooligosaccharide having the structure of the general formula: Cyclo&lcub →6)-[&agr -D-Glcp-(1→4)]n-&agr -D-Glcp-(1→&rcub (1) wherein n is 4 or 5. Further, there are provided a novel isocyclomaltooligosaccharide synthase capable of forming the same; a forming method and production process therefor; a DNA coding for the enzyme; a recombinant DNA comprising the same; a relevant transformant; and a composition comprising the isocyclomaltooligosaccharide or sugar containing the same and use thereof.
