Abstract:

The present invention relates to lactic acid bacteria having increased stability, and a method for producing same, more specifically to lactic acid bacteria having enhanced storage and thermal stability, acid resistance, bile resistance, and stability against digestive enzymes due to a sequential triple-coating of dextrin, gelatin or collagen, and xylitol, and a method for producing the lactic acid bacteria. By sequentially triple-coating with dextrin, gelatin or collagen, and xylitol, the lactic acid bacteria produced by means of the coating method according to the present invention has, in comparison to conventional lactic acid bacteria with no coating, experimentally confirmed greater storage temperature and thermal stability, acid resistance, bile resistance, and stability against digestive enzymes, and thus resistance to external stresses, increased viability of the strain when passing through the gastrointestinal track, and the ability to maintain the original bioactivity in the intestine have been confirmed, and therefore the coating method according to the present invention is anticipated to be effectively applied in related industries using lactic acid bacteria, such as fermented milk, fermented food, functional food, general food, cosmetics and medicine.
