Abstract:
The present invention addresses the problem of providing a liquid fermented milk that has a good thickness, aftertaste, flavor, and texture. The present invention makes it possible to produce a liquid fermented milk having a good thickness, aftertaste, flavor, and texture by blending a cationically reactive stabilizer into a starting milk material, inoculating with lactic acid bacteria, fermenting until the pH becomes 3-5, and subsequently liquefying so as to obtain a viscosity of 200-800 mPa·s (at a measurement temperature of 10 °C) and an average particle size of 20 µm or less.
