Abstract:
Disclosed is a liquid oil and fat that uses inexpensive palm oil and fat as a raw material, whereby an inexpensive liquid oil and fat, which combines particularly high liquid and oxidation stability properties, and solid fat containing a large amount of PPP, are obtained at a high yield. Using palm oil and fat in which the constituent fatty acids contain no more than 70 wt% saturated fatty acids as the primary raw material, after conducting directed interesterification until the SSS/S2U ratio in the oil and fat reaches at least 0.5, and until S2U reaches no more than 14 wt%, without SSS exceeding 31 wt%, during the reaction, the raw material separates into liquid oil and fat and solid fat. In addition, after conducting directed interesterification while forcing oil and fat to flow by applying external force to the oil and fat, which uses the palm oil and fat as the primary raw material, the raw material separates into liquid oil and fat and solid fat without keeping the solid fat content at 1 wt% or less. The following are thus obtained: liquid oil and fat containing 10 to 30 wt% triglycerides, in which the SU2/UUU ratio is not more than 1.9, the SSS content is not more than 2 wt%, and palmitic acid is linked at the 2-position; and solid fat containing a large amount of PPP.
